Recipes for cooking on a campfire?

- for 12 people burgers would be easy, and corn on the cob turns out awesome over the campfire. soak it with the husk ON in some salt water, then put on your cooking rack with husk on over the fire. YUM! TIP: make sure you have enough daylight or good lights set up for when your cooking dinner it really helps to see your food. happy campin' X)
- I love cooking in foil packets while camping. I buy the largest and thickest foil I can find, then tightly wrap each packet and then wrap them all again making them spill proof so you can turn the packets on the fire. We like to make: Shrimp scampi(good appetizer)-garlic, a good amount of butter and shrimp takes about 15 minutes depending on the fire. Roasted potatoes- cube potatoes, add chopped onions, salt, pepper, butter and olive oil(together they raise the boiling point of the butter, preventing the butter from burning prematurely). 25-40 minutes Steamed broccoli- Fresh broccoli florets, butter, salt and pepper and 5-10 ice cubes (depending on the size of your foil packet)...the ice cubes melt and steam the broccoli in the packet. 15-20 minutes Chicken- Large diced chicken breast, zucchini, squash, mushrooms (whatever you like) toss with a good amount of olive oil, salt, pepper, spices if you'd like put in a foil packet cook for 15-20 min. You could do the same with steak and onions or peppers. We've done corn on the cobb, individual or 2 at a time, the same way as the broccoli with the ice. You might want to do a couple of each packet since you are feeding so many. Do make sure that you fold them tightly to get a good seal,, and rotate them often. It is an easy way to cook, with virtually no clean up! Good luck!
- Campfire Potatoes 4 md Potatoes, cut into bit size -pieces (up to 6) 1 md Onion, diced Margarine (butter burns) Salt and pepper Tinfoil Instructions: Spread margarine on sheet of tinfoil and then spread potatoes evenly on top. Sprinkle onions on top and dab with margarine, salt and pepper. Place another sheet of tinfoil on top and seal edges tightly. Wrap entire parcel 1-3 times more with tinfoil. Place on campfire grate or barbeque; takes about 20 minutes. Texas Campfire Chili 1 1/2 lb Chuck Steak; trimmed and cut -into 1/2" cubes( I used hamburger) 1 md Onion; chopped 1 Clove Garlic; minced 2 c Spicy Tomato Juice 1 c Beef Broth 1 ts Worcestershire Sauce 2 tb Chili Powder 1/2 ts Salt 1/4 ts Pepper 1/4 ts Cayenne Pepper 1 tb Masa 1 tb Water Instructions: Brown meat and onions in a skillet; drain. Add garlic, tomato juice, broth, Worcestershire, chili powder, salt, pepper and cayenne pepper. Simmer over low heat for 2 hours, adding more tomato juice if needed. Combine masa and water; whisk until smooth. Add to chili and cook for 15 minutes, or until thickened. Garnish with shredded cheese, sour cream, and sliced jalapeno peppers, if desired. Campfire Meatballs 1 lb Ground beef 1/4 c Bread crumbs 1/4 c Water 1 Egg; slightly beaten 3/4 ts Garlic salt 1/4 ts Black pepper 2 Medium-sized zucchini; cut -in half lengthwise, then -into 1/2-inch slices 2 c Spaghetti sauce Grated Parmesan cheese for -sprinkling Instructions: Preheat the grill to medium-high heat. In a medium-sized bowl, combine the ground beef, bread crumbs, water, egg, garlic salt, and pepper; mix well. Shape into 24 meatballs, each about 1-1/4 inches across. Cut 4 pieces of aluminum foil about 18" x 12" each. Place equal amounts of the meatballs and zucchini in the center of each piece of foil. Top each with 1/2 cup spaghetti sauce. Fold the short ends of the foil together over the center and seal, allowing room for expansion and circulation. Fold in the open edges, sealing each packet securely. Place the packets on the grill for 15 to 20 minutes, or until no pink remains in the meat, turning the packets over once during the grilling. Carefully open the tops of the packets to avoid steam burns and sprinkle Parmesan cheese over the top just before serving. Campfire Hash 2 tb Cooking oil 1 lg Onion, chopped 2 Garlic cloves, minced 4 lg Potatoes, peeled and cubed 1 lb Smoked sausage, cubed 1 cn Chopped green chiles, (4 oz) 1 cn Whole kernel corn, drained Instructions: In a Dutch oven, heat oil. Saute onion and garlic until tender. Add potatoes. Cook, uncovered, over medium heat for 20 mins., stirring occasionally. Add sausage; cook and stir until potatoes are tender and well browned, about 10 mins. more. Stir in chilies and corn; cook until heated through. these are only a few of my fav recipes...hope you enjoy at least one of them :)
